Automatic machine for cutting white feta-type cheese
This machine is intended to cut white cheese in blocks of exact size. Its philosophy depends not only on cutting but also on the ability to give supplement parts where it is needed, which can be achieved through a special program that has been developed for this exact job. The machine itself is easy to use and no special knowledge is required to make it work properly.
The design of this machine was focused on making it resistant to environments with enhanced humidity and oxidization, which would be inevitable if someone takes into account the type of products that this specific machine (feta production line) is meant to process but also the cleansers that would be used to keep it intact after each use.
Ingredients that have been used to assemble this specific machine were:
- Stainless steel which is known for its enhanced ability in resisting any type of oxidization
- Polymers which are water friendly but they are perfect for high corrosion environment
- Light metals consisting of aluminium alloys of special visional series
Accessories with characteristics that fit the product’s type of work:

- Sensors are supplied by IFM and measuring sensors by LEUZE
- Safety parts are made by SICK
- Bands are made by Kevlar and polyurethane

It could be characterized as the heart of the machine and its performance. It depends on the combination of high demanding serve engines connected in a separate control platform. Those serve engines are produced by SIEMENS and the machine needs 7 of them to work properly along with 2 step motors that are supplied by FESTO. Air-engines multiplex through a special platform also supplied by SIEMENS which is called SIMOTION. All the systems are controlled through a screen that is also made by SIEMENS.
HOW IT WORKS
Automatic cutting machine for preparation of pieces of cheese of the same weight
- Feeding line
The machine consists of a band that transfers pieces that are meant to get cut. That band works automatically until it’s full and there’s a capability of carrying up to 5 pieces of cheese each time. The potential and the size of that band can be altered for different needs.
- Weighting Line
The pieces of cheese are led to the weighting line after running through the feeding line. This line can only be supplied with one piece at a time, so that weighting the pieces will provide a specific price for each of them. This line can also achieve double speed compared to this of the feeding line, due to that fact we are sure that only one piece gets on the second line every time, even if a piece is stuck with another one that follows, and when the first piece reaches an exact space of the weighting line, the procedure gets paused for 2 seconds (this duration can be changed through the options of the screen) and the sign that we get through the scales that is placed underneath the piece is sent to a controller which transmits the signal to a central plc of the machine. A misjudgment of weight of about 2gr on and off is always acceptable.
- Waiting line before shaping
Each piece is provided to this one after its weight has been calculated.
- Shaping line
Each piece of cheese is measured according to its height and length and then is prepared for the line that leads into chopping. The shaping line works on a variety of turns which can be set to a desirable number through the main screen of the machine. The reason why pieces are measured that way is that we need to know the way the mass of each piece is distributed and the right measurement of the steps that will be needed during the chopping procedure. A laser sensor is used and it is fundamental that the length has been measured right. All numeric data is inserted into the main plc of the machine and the steps of cutting are calculated.
- Cutting line and holding of the pieces
When in the cutting line, each piece is being held by virtual jaws from above and by the sides and it is being forwarded step by step to its chopping. The knife is constructed by a specially designed blade that can abort each piece after the cutting has been completed.
- Exit line
The procedure here consists of several steps and there is a wait for an extra supplement every time a piece is found to be missing weight. In addition, this line can change the angle it runs on, depending on the piece that is being chopped every time so that it can be secured that the piece will fall normally and in a straight line.
Pieces are chopped according to the predefined weight and with the potential of changing the desirable weight, which can help in avoiding the existence of any remainders and especially remainders that cannot be managed.
So, if it has been chosen that pieces of 200gr should be cut in order to assemble a bigger piece of 1820gr, the machine (yellow cheese production) will prepare 9 pieces of 202.2gr and will not prepare the remainder of 20gr which is not manageable anyway.
If the desirable piece (cheese moulds) is of 1780gr, the machine will prepare 9 pieces of 197.8gr.
This program can secure that remainders and supplements will be the least possible, so that chopping losses will be lower. In addition to these all, the feedback function of the machine is taken into further consideration according to the statistics that are being gathered by the weight controller.
This has to do with the ability to control the machine remotely.
REPAIRS AND REMOTE CHANGE OF SETTINGS
The machine is being kept online 24 hours a day and supported by a special technician of our company (that can be accomplished if the costumer has agreed to it first, otherwise the connection to it can be only started after you petition for it) and it is possible that he can connect and repair every problem that could possibly occur or even change settings depending on the profile to be followed (sensor problems can be fixed too).

Rejection of the pieces that do not comply with the borders that have been chosen is achieved through a specially designed rejector which works using a suitable serve engine, so that rejection reply will be instant and fast.
